Timur berry, due to its pronounced grapefruit notes, is also called grapefruit pepper. It is a false pepper belonging to the Zanthoxylum family. The berry grows on a small tree that develops in the wild in the Mahabharat mountain range.
Aromatic profile:
On the nose, it reveals citrus, tangy, and floral notes. In the mouth, it first brings fresh and tangy notes, then releases a slight spiciness on the tongue. This spiciness then gives way to a slightly numbing sensation in the mouth and palate.
Pairings:
Timur berry can be used in both savory dishes and desserts. It wonderfully accompanies fish, crustaceans, and seafood.
Timur berry also accompanies many sauced dishes and marinades, bringing a floral and slightly tangy note to your traditional dishes (blanquette, pot-au-feu, etc.)
As Timur berry is a close cousin of Sancho berry and Sichuan pepper, it can also be incorporated into all Asian recipes.
