Kampot white pepper

White pepper is made from red peppercorns harvested at full maturity. Once picked, they are plunged into boiling water for 5 minutes, then soaked in pure, cold water for up to 48 hours. The pericarp (husk) is then removed, and the peppercorns are sun-dried. Its hand-picking at peak ripeness makes it a rare pepper.
