Phu Quoc white pepper
Location: Phu Quoc (Vietnam) - Gulf of Thailand
Botanical classification: Piperaceae family
Phu Quoc pepper is grown on the island of the same name, located in the Gulf of Thailand which belongs to Vietnam.
This pepper is entirely grown, sorted, and harvested by hand. It is an exceptional pepper because its production is minimal on the island compared to that of Vietnam, one of the world's largest pepper producers.
Phu Quoc white pepper, made from fully ripe red peppercorns, is soaked and hand-rubbed to remove its outer husk. It is then sun-dried. Its kernel reveals a complex bouquet of slightly minty, briny flavors.
Aromatic profile:
Elegant and delicate, it combines fresh, slightly vegetal notes with a hint of iodine. Less aggressive than black, it brings a soft and refined warmth.
Agreements:
With its briny flavor, Phu Quoc white pepper is a perfect complement to seafood and fish. It also pairs beautifully with flavorful meats like lamb. A real favorite with tarama.
Regarding health:
Pepper has many beneficial properties for the body.
It has been used for a very long time in traditional Indian and Chinese medicine to treat digestive problems, being a stimulant of the secretion of digestive enzymes and bile.
