Gorilla Pepper
Location: Central African Republic – tropical forests of the Congo Basin.
Botanical classification: Piper guineense
Origin & cultivation:
The Gorilla pepper I offer you is a wild pepper, harvested in the Central African Republic, in the heart of preserved forest areas. It grows naturally on climbing vines, without intensive cultivation or chemical inputs.
The harvesting is done manually, using traditional know-how, by local communities living in close connection with the forest. This harvesting method respects both the environment and the natural rhythm of the plant.
Aromatic profile:
Not very pungent but very expressive, this pepper develops a complex and elegant aromatic profile. On the palate, there are soft spicy, slightly woody, sometimes smoky notes, with a subtle, almost mentholated freshness. The finish is long and smooth, without aggression.
Pairings:
Gorilla pepper can be used crushed or whole:
Red meats and slow-cooked meats
Grilled or steamed fish
Roasted or pan-fried vegetables
Broths, sauces and slow-cooked dishes
It withstands cooking well and gradually reveals its aromas.
Favorites:
On slow-cooked meat, added at the beginning of cooking
Crushed on a grilled fish fillet, just before serving
In a creamy root vegetable soup (butternut squash, carrot, parsnip)
On pan-fried mushrooms, to enhance their woody side
Health benefits:
Like many peppers of the genus Piper, it is traditionally valued for its digestive properties. It stimulates the secretion of digestive enzymes and naturally complements rich or slow-cooked dishes.
