Sumac (Rhus coriaria) is native to the Mediterranean basin and the Middle East. It is obtained from the berries of the shrub which, once picked, are then crushed and dried.
Pairings:
Its fruity and tangy flavor perfectly complements fish and shellfish, as well as meats (In Turkey, it is an essential ingredient in marinades for lamb, veal, and beef, as well as in salads). In Lebanon, it is a key spice in Fattoush salad and Labneh.
However, be careful not to cook it for too long, as you risk losing its flavor.
Health benefits:
Sumac, native to the Mediterranean basin and the Middle East, has been known since antiquity: Romans and Greeks used it to replace lemon and vinegar and for its ability to aid digestion, as well as its fever-reducing properties. It is also used in traditional medicine to soothe sore throats, as an antibacterial, and to reduce cholesterol.
Crushed fruits were used to treat diarrhea or to cure liver ailments and urinary disorders in decoctions.
