Black Cardamom
Location: Tropical forests of northern Vietnam
Botanical classification: Zingiberaceae family
Black cardamom (Amomum tsao-ko) belongs to the large Zingiberaceae family, like turmeric or ginger. It grows in the shade of the humid forests of northern Vietnam, in a cool and misty environment, conducive to the development of its intense aromas.
Unlike green cardamom, which is more delicate, black cardamom develops powerful and smoky notes, slightly camphorated, with nuances of wood, eucalyptus, and resin. It is traditionally dried over a wood fire, which gives it its characteristic scent.
The fruits are harvested when ripe, when they turn a dark brown color, then carefully dried before being used whole or ground.
Pairings and Uses
Black cardamom is widely used in Asian, Indian, and Tibetan cuisine. It wonderfully flavors:
Vietnamese broths and soups (like Phở)
Stews made with pork, lamb, or beef
Pilaf rice or long curries
Spice blends like garam masala
It also pairs very well with fruit compotes (especially pear), or homemade infusions.
Remember to slip it whole into your dishes and then remove it before serving to fully enjoy its aromas without the bitterness of the seeds.
