Cloves
Location: Southeastern Madagascar
Botanical Classification: Myrtaceae family
Cloves, the main product of the clove tree, grow on the east coast of Madagascar, near Tamatave. The flower bud is harvested by hand and then sun-dried for 4 to 5 days to achieve a moisture content of about 16%. The clove tree can reach 15 meters in height, and it often takes 20 years for its yield to be optimal.
Pairings:
Cloves are perfectly suited for cooking and complement many sweet or savory dishes (broths, soups, pot-au-feu, in marinades, and sauced dishes), provided they are used sparingly, as their taste is very strong.
A little tip: even though freedom is key, always remember that adding just 2 or 3 cloves to your dishes is enough to enhance them.

Its beneficial properties for the body are numerous: antibacterial, antifungal, antiseptic (for external use, it disinfects wounds, fights bad breath, and is used for toothaches). It is also a natural anti-inflammatory that alleviates stomach pains.
