Nicknamed "poor man's saffron," turmeric is obtained from the plant's rhizome (underground stem), which can be consumed fresh or dried. The young shoots of the plant, as well as the flowers, are used in Thai cuisine. In Indonesia, its leaves are used to flavor fish.
