Fleur de sel from Madagascar is harvested by the Vezo, an ethnic group of Malagasy fishermen from the east coast of the island.
The salt marshes are located north of Tulear, in a small corner of paradise, far from any pollution. The harvest is done manually and the favorable climate of this region provides ideal natural drying conditions.

Considered one of the purest in the world, Madagascar fleur de sel has a delicate, slightly iodized flavor. Hand-harvested and naturally dried.
Fleur de sel is used like regular salt, but its aromas are significantly more subtle and delicate than regular salt because its crystals form on the surface of the marshes, thanks to the combination of wind and sun.
To prevent its crystals from dissolving, it is therefore best to consume it directly on your plate.
