Coriander seeds are obtained from the fruits, once the flowers have withered. They are harvested when they become dry and brown.
Agreements:
With its slightly bitter and lemony flavor, coriander seed complements and enhances vegetable soups, gazpachos, and slow-cooked red meat dishes (such as oven-roasted lamb shoulder). It is also perfect for marinades for white meats, as well as seafood and shellfish (shrimp, crab, langoustines, lobster, etc.).
You can also break it up beforehand in a mortar and pestle and add it to a pan of shrimp.
Regarding health:
Studies on coriander are just beginning and have been mostly conducted on animals, but they demonstrate antioxidant properties, blood sugar-lowering effects after food intake, and may have positive effects on depression.
