The Urfa pepper has a unique harvesting and conditioning process. It is picked, sun-dried for two to three days, then packed for several days so that it can sweat. This method gives it a smoky taste and a unique woody aroma. On the nose, it almost has warm notes of cocoa.
Pairings:
With a relative bite, though more powerful than the Aleppo pepper to which it is similar in taste, Urfa pepper can be sprinkled liberally in all dishes, including stews. You can use it on pasta, with rice. It makes a pleasant substitute for chili oil on pizzas. A favorite with lamb. However, prefer cooking it so that it reveals all its aromas.
