These oven-roasted spiced vegetables are perfect as a side dish for grilled meat, fish, or simply enjoyed on their own. A simple, generous, and flavorful recipe that allows for easy variations in taste depending on the spices used.

Ideal for everyday meals or homemade lunch boxes, this recipe highlights seasonal vegetables with Maison Barthes cumin and turmeric.

Ingredients for 4 people

1 red kuri squash

1 sweet potato

2 leeks

2 carrots

2 parsnips

2 onions

3 cloves of garlic

Olive oil

Ground Cumin “MAISON BARTHES” 2 tbsp

Ground Turmeric “MAISON BARTHES” 2 tbsp

2 sprigs of thyme

Salt and pepper

The recipe

Super simple! Peel the vegetables (you can keep the skin on the red kuri squash) and cut them into pieces.

Toss them in a baking dish with a good drizzle of olive oil and the spices.

Salt, pepper. Mix well.

Bake for 40 minutes in a preheated oven at 200°C (390°F).

Maison Barthes tip

This recipe also works very well with smoked paprika, za'atar, or a barbecue spice blend to vary the flavors throughout the seasons.
