Ingredients for homemade gingerbread

250g honey

125g wheat flour

125g chestnut flour

100g sugar

5g spice mix*

1 packet baking powder

2 eggs

10cl milk
Ready, set, bake!

Preheat oven to 160°C.

Heat the honey over low heat until it becomes liquid.

In a bowl, mix the flours, baking powder, sugar, and spices.

Add the honey and mix. Then incorporate the eggs and mix again.

Gradually pour in the milk, continuing to mix.

Pour the resulting batter into a loaf pan (or a classic cake pan).

Bake for 1 hour at 160°C.

Unmold once the gingerbread has completely cooled.

Store it for at least 24 hours (and up to 3 days) wrapped in aluminum foil at room temperature before enjoying.

You can make your own spice blend: it's super simple and, above all, it's the best way to have gingerbread that suits your taste!
It took me a while to find the right balance for this mix... I've tried several versions over the years, and here's the one I love today: lots of cinnamon and no cloves for me! But good cooking is about what you enjoy... so feel free to adapt this base to find the perfect blend for you!

Otherwise, you can always buy them directly in store.
Grind the spices in a spice grinder or a hand mortar.
Reduce them to a fine powder, sift, and mix well.

Maison Barthes Tip
Gingerbread is even better after resting for 24 to 48 hours: the spice aromas develop more, and the texture becomes softer.
