Ingredients (for about 12 waffles)

800 g sweet potato

250 g flour

4 eggs

10 cl milk

80 g melted butter

2 sachets baking powder

2 tablespoons dried oregano "MAISON BARTHES"

1 teaspoon sumac "MAISON BARTHES"

1 tablespoon sesame seeds

3 avocados

1 block feta

The Recipe
Preheat oven to 180°C.
Peel, cut, and steam the sweet potato. Mash it into a purée.
In an oven-safe dish, place the block of feta, sprinkle with a pinch of dried oregano, season with pepper, and drizzle with olive oil. Bake for 20 minutes at 180°C. (Since feta is already very salty, there’s no need to add more salt.)

In a bowl, mix the flour, baking powder, eggs, milk, melted butter, oregano, sumac, and sesame seeds.
Add the cooled sweet potato purée. Mix. Season with salt and pepper.
Let the batter rest for 30 minutes before cooking the waffles in a waffle maker.
Serve with avocado slices and crumbled roasted feta, accompanied by a lamb's lettuce salad or young spinach shoots.
