Urfa Chili Linguine
I've finally decided to share my Urfa chili pasta recipe with you.
This simple recipe will delight your taste buds!
Ingredients (for 4 people)

1 packet of Linguine (500g)
(you can also use spaghetti, but I confess I prefer linguine) -
1 to 2 teaspoons of Urfa chili flakes (depending on your taste for spiciness)

1 bunch of flat-leaf parsley (or basil, depending on the season)

Olive oil
-
Garlic (2 to 3 cloves)

Salt and freshly ground pepper

Fleur de sel and parmesan shavings for final plating
Preparation

Cook the pasta in a large pot or saucepan of well-salted water until desired doneness.
(Personally, I prefer them al dente.) -
Drain the pasta, reserving a little of the cooking water (about 6 cl).

In the same pan, heat 3 to 4 tablespoons of olive oil.
Then add the Urfa chili flakes and the minced garlic. -
Sauté gently with a wooden spatula.
The aroma of Urfa chili and garlic will fill your kitchen! -
After 3 to 4 minutes, pour in the reserved cooking water. Heat for another 2 minutes.

Then add the pasta to the pan and mix well so that the sauce coats the pasta evenly.
(You can add a drizzle of olive oil if needed.) -
Just before serving, add the roughly chopped flat-leaf parsley. Mix again.
Plating
Serve in a deep plate, add:

A little fleur de sel

A few turns of the pepper mill

Freshly grated parmesan shavings
All that's left is to wish you bon appétit.
